The good thing about mold
Lets face it. Mold consumes dead organic matter, like garbage. Mold causes decay and helps us to reduce the amount of rubbish on earth.
Another useful side to mold – penicillin – was discovered many years ago. It was found among the common household mold called Penicillium. Way before the discovery of other antibiotics, penicillin had saved millions of lives.
The “bleu” in bleu cheese is mold. In Roquefort, Stilton and Gorganzola cheeses, you will find mold.
In Asian countries, mold is being used to produce sauces like light soy sauce, oyster sauce, dark soy sauce, etc. Mold also makes cakes out of soya beans.
In France, a mold called Botrytis dehydrates rotten up grapes to produce a type of sweet wine that is of first grade.
All these good things makes us see mold in a different light. Not just as some bad, unwanted living organism that share our planet with us.
